Convection 101

We get customers coming in asking the differences between convection and non convection ovens. Let's see if I can simplify it. Convection ovens use a fan inside the oven cavity to circulate the air. This produces even heat, which results in better baking results. The cook times are reduced, along with temperatures. We use the 25 degrees less and 20% less time calculation, seems to work well.Convection oven results are most visible on baked goods, such as cookies, cakes, and breads. Convection ovens also do very well on meats when using the convection roast feature. Now that the cooking season is here, replace that old oven with a new convection oven, and taste the difference.
